Acetic Acid Bacteria (AAB) are commonly found in Brazilian industrial ethanolic fermentations, with the gender Acetobacter being one of the most commons. These microorganisms are restricted aerobic, gram negative and capable of producing acetic acid from ethanol when under aerobic conditions. Due to their high acetic acid production capacity, AAB have been widely used for vinegar production. Acetobacter senegalensis is a thermotolerant bacterium first isolated from Mango (Mangifera indica L.) in Senegal, Africa. These microorganisms are negative oxidases, positive catalase and have high temperature tolerance. These microorganisms differ from Acetobacter tropicalis, phylogenetically closest species, in the sense that they are able to grow in media containing high levels of Ethanol and Glucose.
