As is known to all, Fructilactobacillus sanfranciscensis is the main lactic acid bacteria that plays an important role. At present, the root cause of the prevalence of this species in the sourdough system has not been fully studied, this study discussed in genotype and phenotype, combined with comparative genomics analysis method, and analyze the advantage of sourdough of F. sanfranciscensis species characteristics.
